Ratatouille or Tian is a masterpiece of French cuisine. Ratatouille is a bright and chunky summer vegetable stew, rich with olive oil and fragrant with garlic and herbs. I first learned about this dish when I watched the movie "Ratatouille" and got my inspiration from there. It looked absolutely delicious, so I knew I had to recreate it. Ratatouille or Tian is a famous recipe and the cooking times differ widely from place to place, but common ingredients include tomato, garlic, onion, courgette (zucchini), aubergine (eggplant), bell pepper, and some combination of leafy green herbs common to the region.
