Aloo gobi is a vegetarian dish from the Indian subcontinent made with potatoes, cauliflower, and Indian spices. It is popular in Indian and Pakistani cuisines.
This spiced potato and cauliflower stir fry is one of the most popular Indian dishes prepared in restaurants & home
Usually in restaurants they fry the potato and cauliflowers first and then add it to the spices, but this recipe is plain and simple home style.
Ingredients
Oil - 2 Tablespoons
Cumin Seeds - 1 Teaspoon
Garlic - 8 Cloves
Turmeric Powder - Half Teaspoon
Cumin Powder - 1 Teaspoon
Coriander Powder - 1 Teaspoon
Red Chili Powder - 1/4th Teaspoon
Salt - 2 Teaspoons or as per taste
Potato -1 Small
Cauliflower - 1 medium
Coriander or Cilantro Leaves
Steps
Heat a pan and add 2 tablespoons of oil, you can reduce it if you like.
Then add 1 teaspoon of cumin seeds. Once the cumin seeds starts to crackle, add 1 small finely chopped onion, let it cook over medium heat till it turns slightly golden brown
You will notice that the onion is reduced to almost half, stir it and make sure it doesn't stick to the pan.
Add 7-8 grated garlic cloves, let it cook over low heat for 2-3 minutes. Then add half teaspoon of turmeric powder, 1 teaspoon of cumin powder, 1 teaspoon of coriander powder, 1/4th teaspoon of red chili powder, you can always adjust the spices according to your taste.
Mix and cook for 2-3 minutes over low heat
Then add 1 medium chopped tomato to the pan, you can use tomato puree too
Let it cook over low or medium heat till the oil starts to ooze out of the tomatoes
You can even cook this recipe without the tomato, I like to add it but it’s completely optional and can be omitted on busy days
Once the oil starts to ooze out of the tomatoes and they have softened, add 1 small roughly chopped potato, followed by half teaspoon of salt.
Give it a mix and cover it and cook for 8-10 mins. If you feel that the vegetables might burn, add splashes of water or 2-3 tablespoons of water to the pan.
You have to cook till the potato is atleast a 90% cooked
Add the cauliflower and mix it well with the spices
Add 1 and half teaspoons of salt or as per taste and mix
Then cover and cook the cauliflower for another 8-10 minutes over medium or low heat
You can check the progress of the cauliflower in between and cook till it’s completely cooked
Once done add some finely chopped cilantro or coriander leaves and mix
Finally cook it over 2-3 minutes over high heat and add some more coriander or cilantro leaves
The Aloo gobhi sabji( dry vegetable) is ready
You can serve this with chapati, naan, pita bread or even rice as a side dish
