This fresh, healthy Vegan Chickpeas Salad is not only easy to prepare but also delicious and high in Protein. I used all my favorite vegetables which pairs so well with the chickpeas and brings out the best flavors.
This chickpea salad is a light, healthy, vegan recipe that is packed with veggies, and absolutely delicious. It makes a lovely light lunch or a side dish and is perfect for a bbq or picnic. It's the perfect way to brighten up your pantry staples with fresh ingredients.
Ingredients
Cooked Chickpeas - 300 Grams
Cucumber - Half Medium
Carrot - 1 Medium
Arugula - 7-8 Leaves
Cabbage - 1/3rd small
Spinach - 3-4 Leaves
Onion - Half Small
Lettuce Leaves - 2
Cherry Tomatoes - 10
Parsley - a few strands
For the Dressing
Olive Oil - 1 Tsp
Balsamic Vinegar - 2 and half tablespoons
Agave - 1 Tablespoon
Tahini - 3 Tablespoons
Lime Juice - 1 and half
Garlic Powder - 1 Teaspoon
Red Chili Flakes - Half Teaspoon
Nutritional Yeast - 1 Teaspoon
Pepper - Half Teaspoon
Salt - 1 and half Teaspoon
Steps
1) If you buy your chickpeas in a can, they will have been cooked already and are not raw, therefore they are safe to eat straight from the can. Raw chickpeas, however, need to be soaked and cooked before eaten.
2) Finely chop all the vegetables, especially the green ones. Although I roughly chopped the arugula leaves
3) For the dressing mix all the dressing ingredients well and you can omit the chili flakes and pepper in case you want to omit the spicy flavors
4) Add the dressing to the vegetables and mix everything.
