Mushroom Manchurian Vegan Recipe

We are preparing one of the yummiest starter recipes ever, Mushroom Manchurian. Once you learn this, trust me, you will want to repeat it. It is perfect if you are a mushroom lover. also it's vegan.





Ingredients

Mushroom - 250 g

For batter

All-purpose Flour - 8 tbsps

Corn Starch - 2 tbsps

Salt - ¾ tsp

Pepper- half tsp

Red chili Powder - half tsp

Water - 10 tbsps 


For Sauce Mix

Soy Sauce- 1.5 tbsps ‘

Vinegar - 1 tbsp

Ketchup - 3 tbsp

Chili Sauce - 1 tbsp

For Cornstarch slurry

Cornstarch - 2 tsp

Water - 8 tsp


Onion - 1 Medium

Spring onion - 1-2 tbsp

Garlic - 6 big cloves 

Chili - 3

Sauce Mix 

Cornstarch Slurry

Oil for cooking - 2 tbsp

Water - 14 tbsp

Spring Onion greens - as required


Steps


  1. Wash the mushrooms thoroughly and then set them aside to dry

  2. For the batter, add all-purpose flour, cornstarch powder, salt, black pepper powder, and red chili powder to a big bowl and mix all the dry ingredients. Then, add water to the flour to achieve a flowing consistency( not too thick nor too watery) 

  3. Coat the mushroom in the batter. Heat the oil and Deep fry the mushrooms. Be careful, as the mushroom will release water into the oil. 

  4. For the sauce mix: Soy sauce, vinegar, tomato sauce, and chili sauce in a bowl and mix well. 

  5. For the cornstarch slurry: Mix cornstarch with water in a separate bowl

  6. Final Base sauce: Heat a pan and add oil. Add finely chopped onion and cook until it turns golden brown over medium heat. Add chopped garlic, and cook for another 2 minutes over low heat. Add chopped chili, and stir-fry them for 2 mins

  7. Add the sauce mix and combine everything. Let this cook over medium or low heat until the oil separates, then add water and stir everything. Let it cook over medium heat again for 4-5 mins

  8. Add the cornstarch slurry and turn the heat to low. The sauce will start thickening- keep stirring for 1-2 mins, then switch off the heat. Add the fried mushrooms. Mix with the sauce till they are evenly coated

  9. Garnish using spring onion greens, and The Mushroom Manchurian is ready!
