Recipe
Step 1: Take around 200 grams of soya chunks or textured vegetable protein for the recipe. You can either cook the soya chunks for 5-7 mins or soak them in water for 15-20 mins
Then wash thoroughly under fresh water and squeeze out the excess water. Make sure you don’t break the soya chunks while squeezing the water
Step 2: Marinate the Soya chunks
Add 2 teaspoons of salt, 1 tsp of pepper, half tsp of red chili powder, grated ginger garlic, 8 tbsps of all purpose flour. Mix everything till the soya chunks are coated evenly with the marinate.
Now you have 3 options, you can either bake, deep fry or air fry these soya chunks,
Step 3: I am going to go with the airfryer option
Add some oil to the bowl, it’s entirely optional. Brush it evenly. Then add the soya chunks to it
Add a little bit of more oil on top
Air fry the Soya chunks for 10 mins over 190 C
Step 4: Prepare the Sauce
Heat a pan and add oil to it. Then add half finely chopped medium onion to it
Cook the onion till it’s slightly golden brown, add finely chopped or paste of 7 cloves of garlic, followed by half finely chopped chili. Cook for 2 minutes by stir frying it
Add 1 tablespoon of soy sauce, 3 tablespoons of ketchup, give it a mix and cook till you see the oil starts to separate from the sauce
Add the chopped Bell peppers and onion bulbs to the pan and mix with the sauce. In a min add 1 teaspoon of vinegar
Mix a little and then add 4-5 tablespoons of water, let this cook over low heat for 2-3 mins and meanwhile prepare the cornstarch slurry
Take around 50 ml of water and add 1 teaspoon of cornstarch slurry
Mix it well, make sure you use water at room temperature. Then add the cornstarch slurry to the pan and mix well
The gravy will start to thicken up
Mix well and let it cook over low heat for 5-7 minutes
Add half teaspoon of salt, or salt as per your taste, 1 tsp of pepper, spring onion greens
Add the cooked soya chunks and mix well
Make sure that the soya chunks are completely coated with the sauce
Garnish using spring onion greens and the chili soya manchurian is ready
