These baked stuffed buns are delicious, soft and enriched with some spicy vegetable mix and vegan cheese. They envelop this savory filling in a pocket of pillowy soft dough and are quick and easy to prepare at home.
Ingredients for Vegan Stuffed Buns
Ingredients for yeast water
Lukewarm Water - 130 ml
Vegan Sugar - half tablespoon
Yeast - 2 Teaspoons
Ingredients for Dough
All purpose flour - 200 Grams
Salt - Half teaspoon
Olive Oil - 1 Tablespoon
Yeast water
Ingredients for Stuffing
Oil - 2 teaspoons
Garlic Cloves - 5
Mushrooms - 200 Grams
Frozen Green Peas - 1 small bowl
Carrot - 1 medium
Pepper - 1
Boiled Black Beans - 250 Grams
Cumin Powder - 1 Teaspoon
Turmeric Powder - 1/3rd Teaspoon
Red Chili Powder - Half Teaspoon
Salt - 1 Teaspoon
Black pepper powder - Half Teaspoon
Oregano - Half Teaspoon
Lime Juice - Half Lime
Vegan Mayonnaise - 2 Tablespoons
Vegan Cheese - As required
Plant based milk as needed
White & Black Sesame Seeds as Required
Step 1 - Activating the Yeast
To a bowl, add approx 130 ml of lukewarm water. Then add half Tablespoon of vegan sugar and mix it till it dissolves. Then add 2 teaspoons of yeast to the water and let it rest for 15-20 minutes or till the yeast is activated.
Step 2 - Prepare the Dough
To a bowl, add 200 grams of all purpose flour, half teaspoon of salt, 1 tablespoon of olive oil, then add the yeast water gradually. Mix everything. Keep on mixing by adding the water to the flour, once everything comes together knead the dough till it’s soft and well done. It took me around 10 minutes to get the dough nice and soft. Turn the dough into a round ball and you can rotate it using your pinkies.
Then take the same bowl, and sprinkle some drops of olive oil and brush it across the surface. Now place the dough in the bowl and rub the olive oil around the surface of the dough.
We are now going to cover it and let it rest for 1-2 hour so the dough doubles in size.
Step 3
Prepare the stuffing
These are the vegetables I am using and you can use your fav veggies
To a pan add 2 teaspoons of oil, then add 4-5 finely chopped garlic cloves, cook the garlic cloves over low heat for 2 minutes. Make sure that the heat is set to low so the garlic doesn’t burn.
Now it’s time to add the vegetables, add 200 grams of roughly chopped mushrooms, a small bowl of frozen green peas, 1 finely chopped medium carrot, 1 finely chopped pepper. Stir fry and cook till the mushrooms turn soft.
Once the vegetables are cooked, add 1 teaspoon of cumin powder, 1/3rd teaspoon of turmeric powder, half teaspoon of red chili powder. Cook the spices over low heat for 2-3 minutes.
Then add roughly around 250 grams of boiled black beans. Add 1 teaspoon of salt or salt as per taste, half teaspoon of black pepper powder, half teaspoon of oregano, mix everything and cook for 2-3 minutes.
Finally add juice of half a lime. Switch off the heat and mix everything well.
Once the stuffing is cool, add 2 tablespoons of vegan mayonnaise - which is entirely optional. You can add cream cheese or salsa as well.
Mix everything till it’s well combined.
The stuffing is finally ready.
Step 4 - Time to prepare the stuffed buns
The dough has doubled in size, & it’s so soft.
Place the dough on a flatter surface. Divide the dough roughly into equal parts.
Now take off the dough piece and tuck it from outside to inside and this is also another way you will know that the dough was done right - as it should be soft, stretchy and pillowy.
Once all the small dough balls are ready, cover them back again and let them rest for 10-15 minutes. This step is optional but if you have time do this as the dough balls will rise during this time which in turns makes the buns more fluffy.
Then add dry flour on a flatter surface, take one of the dough balls and flatten it out gently. Don’t roll the dough too thin. Once done, add the stuffing on the dough, add vegan cheese on top of it (optional again). Wrap the bun tightly and make sure there are no gaps. I am just making sure it’s round and then repeat the same for the rest of them.
Lightly brush the baking tray with oil and place the dough balls on the tray. Then brush them with plant based milk or vegan butter.
Sprinkle some black and white sesame seeds.
Bake the buns over 180 C for 25-30 minutes in a preheated oven.
The Vegan stuffed buns are ready. They smell incredible, so soft and a perfect meal. They are amazing for parties, potlucks as they are hassle free. Kids would love them. You can also make them in bulk and freeze them. Trust me no one will ever say no to these.
