Today we are preparing Vegan Alfredo Cauliflower sauce. This healthy SAUCE is made from pureed cauliflower and is gluten free, so creamy and delicious.
Ingredients
Cauliflower - 1 Large
Garlic Cloves - 4
Onion - 1 Large
Oil - 2 teaspoons
Milk - 500 grams
Salt - 1 Teaspoon
Black Pepper - 1 Teaspoon
Nutritional Yeast - 4 Teaspoons
For the Pasta
Cauliflower Alfredo Sauce - As needed
Salt - As per taste
Black Pepper powder - optional
Pasta
Chives
Let’s get started
Step 1 :
Take one medium cauliflower, the one I am using is around 800 grams, remove the leaves of the cauliflower and slice it into small florets, as it will help in the cooking process.
After slicing the cauliflower, we are going to cook it by submerging in water till the florets get soft & tender.
Check the florets from time to time and when you are able to break them easily with the help of a spoon, switch off the heat and drain the water and let the florets cool down.
Step 2:
Roughly chop around 4 medium cloves of garlic along with 1 large onion.
To a pan, add 1-2 teaspoons of oil, then add the onion to the pan, cook the onion till it’s translucent. Spread it as evenly as possible so it gets cooked quickly.
After a few minutes you will observe that the onion has turned slightly translucent.
Add the chopped garlic to the pan, stir fry the garlic over low heat for 2 minutes.
After two minutes, switch off the heat and let them cool down
Step 3:
Once everything is at room temperature, we will blend our ingredients,
Add the following to the blender:
- 500 grams of plant based milk, I am using soy milk for this recipe,
- Cooked cauliflower florets, since my blender is small I am going to blend it by adding few of them at a time, you can adjust this as per your blender,
- Cooked onion and garlic,
- 1 teaspoon of salt, you can always adjust the salt later, so don’t add too much in advance,
- 1 teaspoon of black pepper powder and
- 4 teaspoons of nutritional yeast.
As per the size of the cauliflower, you can adjust the other ingredients
Making the Cauliflower Alfredo Pasta
Add the Cauliflower Alfredo sauce to the pan. You can always adjust the thickness of the sauce as per your choice by adding or reducing water or plant based milk. Check the salt and adjust it if needed. followed by the half teaspoon of black pepper powder,
Add the cooked pasta in the pan and mix everything, I am using gluten free pasta for this recipe, finally add some finely chopped chives. Serve it hot
You can also store this amazing sauce and incorporate it in so many different recipes. You can always adjust the thickness of the sauce as per your choice, and increase the quantity in the pasta as well.
