Vegan Creamy Green Pasta Recipe

This Creamy and healthy Pasta is filled with flavors and a mix of nutritious ingredients like Avocado, green peas, and spinach! Try this easy and delicious recipe, and you can prepare it in no time!

Ingredients for the Creamy Green Pasta recipe

Oil - 1 teaspoon

Onion - half small

Garlic - 6 medium cloves

Cumin - 1 teaspoon

Green Chilis - 2 small

Green Peas - 150 grams

Salt - half teaspoon


Pasta - 220 grams


Avocado - Half

Cashew - 1 tablespoon

Baby Spinach - 10 leaves

Lime - half


Chili Flakes

Oregano

Steps:


1) I am using the Rigatoni Pasta for this recipe, and before we start the cooking process, blanch the baby spinach leaves by pouring hot water. After 2-3 minutes, pour out the hot water and dip the spinach in ice-cold water. Blanching helps preserve the color and nutrients of the spinach and can also reduce harmful bacteria.


2) Soak the cashews for a few minutes. Soaking helps to reduce the phytic acid content, promoting better absorption of minerals such as zinc, magnesium, and calcium.


You can also soak the cashews overnight.


3) Heat a pan and add oil. Once the oil is hot, add the sliced onion and stir fry over medium or high heat for a few minutes. As we blend everything towards the end, you can roughly chop the onions but try to keep them to a similar size as it will promote even cooking. 


4) Add the sliced garlic and green chili to the pan once the onions are slightly translucent or golden. Stir-fry them for 2-3 minutes over low heat. 


5) Add cumin powder and stir fry everything for another 1 minute.


6)Add the frozen green peas to the pan. Stir fry them for 3-4 minutes over medium heat, then turn it off. 


7) Cook the pasta as per the instructions in the packet. Once the pasta is done, carefully pour the excess water, drizzle some olive oil, and mix with the pasta. That way, the pasta won’t get sticky and will remain fresh.


8) Time to blend everything and make that fantastic Green sauce


9) Add the green peas and onion mixture to the blender and some fresh avocado, spinach, cashews, lime juice, salt, and water. Blend till you get the smooth sauce.


10) Add the sauce to the pasta; you can prepare more, refrigerate, and use it for over 3-4 days. 


 11) Even though this sauce is everything you need, a little bit of seasoning goes a long way, and this dish would be incomplete without some red chili flakes and oregano. You can add as much as you like, and it will bring out the flavors in this delicious, creamy pasta.
