Today we are preparing a quick and easy recipe for Vegan Fried Rice. This recipe is usually prepared with the left over rice as they work as the perfect base for the Fried Rice recipes, although I will explain how you can prepare this from scratch with all the tips and tricks.
Ingredients for Vegan Fried Rice
Uncooked Rice - 300 Grams
Oil - 2 Teaspoons
Onion - 1 Small
Garlic Cloves - 4-5
Chili - 1
Cabbage - 150 grams
Carrot - 1 Medium
Bell Peppers - 1/3rd red, 1/3rd Green & 1/3rd Yellow
Frozen Green Peas - 4 tablespoons
Cooked Corn - 4 Tablespoons
Vinegar - 1 Tablespoon
Black Pepper Powder - 2 teaspoons
Salt - 2-3 teaspoons or as per taste
Soy Sauce( Gluten free) - 2 Teaspoons
Spring Onion Greens - 3 Tablespoons
Step 1 :
Let’s start with preparing the rice. I am using Basmati rice around 300 grams for the recipe, but you can use any rice of your choice. Make sure you wash the rice thoroughly and then soak them for a minimum of 30 mins.
Cook the rice till they are well done.
Check the progress of the rice from time to time as we don’t want them to get overcooked.
Once the rice is cooked, remove the excess water and then spread the rice on a flatter surface so it cools down completely.
Note : You need to remember that the rice needs to rest and come at room temperature otherwise it will break while preparing the recipe and it will become mashed fried rice.
You can prepare this Vegan fried rice with your fav vegetables, or whatever you have at hand, it can be as simple as you want.
Step 2 :
Heat a pan, add 2 teaspoons of oil, then add 1 small finely chopped onion, 4-5 finely chopped garlic cloves, 1 finely chopped chilli, I am using the red one as that is available here locally, you can use green chili or omit the chili if you don’t want this to be spicy.
Stir fry for 2 minutes over high or medium high heat, we are not going to brown the onions, just a little stir fry should be enough, then add some finely chopped cabbage around 150 grams, 1 medium chopped carrot, and cook them for 2 minutes over high heat.
When we prepare fried rice, the vegetables should always have a crunch and the rice should be soft.
There are so many different ways fried rice can be prepared but this one is my fav and always comes out great.
Then add chopped bell peppers, I am using red green and yellow - like the traffic lights, followed by frozen green peas and corn.
Stir fry them for another 2 minutes over high heat.
Then add 1 tablespoon of vinegar to the pan, mix it with the vegetables, then add some black pepper powder, 1 teaspoon of salt, give it a mix,
Add the cooked rice, make sure it is at room temperature so it doesn’t break. Add 2 teaspoons of soy sauce on the rice, always add it to the rice instead of the vegetables.
Then add 1 teaspoon of salt and mix.
When we mix the rice with the vegetables, either toss them or lift the rice from the bottom and fold so the rice doesn’t break.
Finally add some chopped spring onion greens, they provide such great flavor and crunch to the dish. Mix again and switch off the heat.
This is such an easy recipe to follow when you have some leftover rice and you want to prepare something quick and delicious. The best combination for me with fried rice is manchurian, you can make cauliflower, mushroom or tofu manchurian to serve along with the Vegan Fried Rice and make it more wholesome.
