Vegan Taquitos Using an Air Fryer

Today we are making Vegan Taquitos using an airfryer, a taquito, or rolled taco, is a Mexican dish made up of a rolled-up tortilla with a stuffing and is often deep-fried. We are preparing this amazing recipe with a stuffing of black beans and mushrooms and serve them with guacamole and salsa.




Ingredients

Corn Tortillas - 6

Mushrooms - 200 grams

Oil - 1 tablespoons

Salt - 1 Teaspoon

Black Pepper - Half Teaspoon


Boiled Black Beans - 500 Grams

Onion - Half small

Cilantro as needed

Vegan Cheese - 40 grams

Salt - 1 and half teaspoon

Black Pepper - 1 teaspoon

Garlic Powder - Half teaspoon

Oregano - Half teaspoon

Juice of half a lime


Filling the Taquitos

Tortilla

Black bean stuffing - 4 teaspoons

Lime juice

Grated Vegan cheese as needed

Brush oil on top of the taquitos


So let’s get started

Step 1 : Prepping the Mushrooms


We will start with frying the mushrooms, to a pan add around 1-2 tablespoons of oil, then add 200 grams of mushrooms, cook the mushrooms over medium heat till they get soft and tender, you can also add some chopped garlic if you like to enhance the flavors of the mushroom. When the mushrooms get tender, add around 1 teaspoon of salt, half teaspoon of black pepper powder, mix everything and remember if you don’t like mushrooms you can entirely omit them from the recipe or add anything else in their place like tofu, spinach or chickpeas, literally anything. You can also choose to add any other spices to mushrooms. Switch off the heat, and set them aside.



Step 2 : Prepping the Black Bean Mixture

Next we will season the boiled black beans


To a bowl add 500 grams of boiled black beans, you can use tin black beans too. Then add half small finely chopped onion, some cilantro, around 40 grams of grated vegan cheese, 1 and half teaspoon of salt, 1 teaspoon of black pepper, half teaspoon of garlic powder, half teaspoon of oregano, and juice of half a lime, mix everything. You can always choose to add or reduce the ingredients as per your taste, this is one of my fav combination.



Mash the beans while mixing, this will help them to stick together and not fall off from the roll while rolling or eating, feel free to use your hands whichever is easier.


Step 3 : Stuffing the Taquitos


I am using corn tortillas, add around 4 teaspoons of black beans stuffing, then layer the mushrooms on top of it, add some lime juice. Top it up with some vegan grated cheese, then roll the tortilla. You can use a toothpick to help the taquitos from opening.






Prepare the remaining Vegan Taquitos


Before placing them in the airfryer I like to brush them with some oil, which is optional but adds a little extra crisp to them.

The best part of this recipe is that you can prepare it oil free anyday using the airfryer, oven or even on a ceramic or non-stick pan.



Air fry them for 3-4 minutes over 180 C on one side


Once done, take them out and flip them, brush them with oil on the bottom side and then air fry them again for 3-4 mins over 180 C


And the taquitos are ready, they are so crispy on the outside and you can top them with some salsa or guacamole, but I don’t like to add anything on top as it makes them soggy, so I just dip them in the salsa while eating.


They are perfectly golden from all the sides and sooooo crispy.



They can a great lunch or snacks recipe, you can make them with a lighter stuffing or with a heavier one, it’s all upto you, but trust me everyone will love this amazing recipe, they can be easily baked and made on a pan as well, so versatile.
